Our family is big. Our family is loud. Our family LOVES food and we can be very opinionated about it. Very. A plate of hummus shouldn’t have gotten everyone so riled up, but it did, so a long conversation of everyone-speaking-over-everyone ensued and didn’t come to an end until we agreed that the reason that plate of hummus wasn’t perfect had nothing to do with the recipe, and everything to do with the quality of the main ingredient: Tahini. The conversation took us to exploration, and we were determined to answer the question: Can we make Tahini in Canada that tastes just as good as the Tahini our grandmothers use in the Middle East?
There are some food experiences that you simply can’t re-capture—biting into a ripe red tomato on an Italian farm, watching a Spanish fisherman drop off the seafood moments before it makes it into your Paella, or picking a ripe mango right off the tree in Egypt to enjoy it as you walk around. We can’t recreate these experiences here, but we knew that we most certainly could recreate the perfect Tahini so long as we sourced the perfect sesame seed, and applied a great deal of accuracy in the manufacturing process. So we studied, and studied, and travelled to visit sesame farmers around the world to taste their seeds and review their farming practices. The day eventually came and we picked the seeds that would make their way into our very first jar of Tahini. Millions of jars later, we are so proud to have the most authentic tahini on the market…and we owe it all to a humble plate of hummus.
