Ribbons of smooth and crunchy pistachio spread through a brown-butter blondie base.

  1. Preheat oven to 350°F (175°C).
  2. Mix the melted butter, brown sugar, and egg, then stir in the flour.
  3. Spread into a lined pan, dollop with pistachio spread, and swirl with a knife.
  4. Bake for 22–25 minutes.

Warm the spread slightly first — it swirls into the batter far more evenly than straight from the fridge.
