A weeknight stir-fry that skips the separate honey-glaze step, since the cashews already carry it.

METHOD

  1. Stir-fry the chicken and vegetables in a hot pan with soy sauce until cooked through.
  2. Remove from heat and stir in the honey cashews.
  3. Serve over rice.

Add the honey cashews off the heat, at the very end — direct high heat can scorch the honey coating.
