  1. Melt the sugar and honey together in a saucepan over medium heat until amber-colored.
  2. Stir in the roasted sesame seeds quickly.
  3. Pour onto a lined tray, spread thin, and let cool completely before breaking into pieces.

Work fast once the caramel is ready — it hardens within a minute or two of coming off the heat.
