METHOD

  1. Preheat oven to 375°F (190°C).
  2. Mix the flour, sesame seeds, olive oil, water, and a pinch of salt into a dough.
  3. Roll out very thin on a lined baking sheet and score into squares.
  4. Bake for 15–18 minutes until golden and crisp.

Roll the dough as thin as you can manage — thickness is the main thing separating a cracker from a biscuit.
