INGREDIENTS

  • 4 cups boiled potatoes, cubed
  • 3 tbsp Balsam Pumpkin Seed Oil
  • 1 tbsp white wine vinegar
  • 2 tbsp chopped chives
  • Salt

METHOD

  1. Whisk the pumpkin seed oil, vinegar, and salt together.
  2. Toss with the warm potatoes.
  3. Fold in chopped chives and serve warm or at room temperature.

Dressing the potatoes while they're still warm helps them soak up the oil's nutty flavor.
