Warm potato salad dressed with nutty pumpkin seed oil instead of the usual mayonnaise.
INGREDIENTS
- 4 cups boiled potatoes, cubed
- 3 tbsp Balsam Pumpkin Seed Oil
- 1 tbsp white wine vinegar
- 2 tbsp chopped chives
- Salt
METHOD
- Whisk the pumpkin seed oil, vinegar, and salt together.
- Toss with the warm potatoes.
- Fold in chopped chives and serve warm or at room temperature.
Dressing the potatoes while they're still warm helps them soak up the oil's nutty flavor.
