  1. Whisk the pomegranate molasses, olive oil, and garlic together.
  2. Brush over the chicken and marinate for at least 30 minutes.
  3. Roast at 400°F (200°C) for 30–35 minutes, brushing with more glaze halfway through.

The molasses' acidity helps tenderize the chicken while it marinates, on top of adding a deep, tangy glaze.
