One jar of tahini, five pantry staples, and a dressing that works on everything from roasted vegetables to grain bowls.

INGREDIENTS

  • 1/3 cup Balsam Tahini Paste
  • 2 tbsp lemon juice
  • 1 small garlic clove, grated
  • 1 tbsp maple syrup or honey
  • Water, to thin
  • Salt, to taste

METHOD

  1. Whisk the tahini paste and lemon juice together — it will seize and thicken first, that's normal.
  2. Whisk in the garlic and maple syrup.
  3. Add water 1 tbsp at a time, whisking, until pourable.
  4. Season with salt to taste.

This keeps in the fridge for about a week — just loosen it with a splash of water before serving.
